Homemade Funfetti Cake

  • 1 and ⅔ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 large egg
  • ¼ cup yogurt
  • (plain or vanilla; or greek yogurt; or sour cream)
  • ¾ cup milk
  • (cow's milk; or soy milk; or almond milk)
  • 1 Tablespoon vanilla extract
  • ⅔ cup sprinkles
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 3-4 cups powdered (confectioners') sugar
  • ¼ cup heavy cream
  • 2 and ½ teaspoons vanilla extract
  • a pinch of salt
  1. Preheat oven to 350 and grease 3 6" pans, 2 8" pans, or one 9" pan.
  2. In a medium-sized bowl mix together flour, baking powder, baking soda, and salt.
  3. Melt butter and place in a large bowl and whisk in sugars until all lumps are gone.
  4. Whisk in the egg until smooth, then the yogurt, milk, and vanilla. Be sure to do one at a time and gradually, so that you have a smooth mixture at the end with no lumps.
  5. Adding ¼ c at a time, mix in the dry ingredients slowly until combined.
  6. Fold in sprinkles until just combined-- do not over mix.
  7. Place batter evenly into prepared pans and bake until cooked through-- 30-35 minutes. A knife should come out with crumbs clinging to it (not batter!).
  8. To make the frosting, beat the butter in a standing mixer with the whisk attachment until light and fluffy.
  9. Add in the sugar, one cup at a time, beating until smooth after each addition.
  10. Add the cream and vanilla and beat on high for several minutes, until it is very fluffy.
  11. Add salt and beat to combine. If the mixture is too thin, add ¼c powdered sugar; if too thick, add a splash of cream.
  12. Frost the cake. Eat the cake. Love the cake!
